Kick Up Your Homegate with our Beer Cheese Tacos!

It’s getting to be that time of the year! No, not Christmas – NFL playoffs of course! And while my favorite team from Buffalo won’t be in the playoffs this year, we are still looking forward to all the awesome football that is yet to come this year.  For us, football season means a little bit of tailgating and a WHOLE LOT of homegating!  I was super excited for Old El Paso® and Budweiser® to sponsor this post to show you one of our recipe creations that is going to be on our homegate table throughout the rest of the season!

To create our recipe, we headed to Walmart to grab our ingredients, including Old El Paso Mini soft tortilla taco boats and Bud Light Lime from Budweiser®!

I decided to make a yummy Chicken Taco Boat with a Beer Cheese sauce – everyone loves beer and cheese, right?  This recipe is SUPER easy and will have your family and friends calling for more at halftime!  You start by making a basic roux in the bottom of your pan – 3 tablespoons of butter mixed with 3 tablespoons of flour.  Cook on medium, whisking constantly, until the flour just starts to brown. Then, quickly whisk in 1 cup of skim milk, and then 1 bottle of Bud Light Lime. Whisk until no lumps remain.


Then, by handfuls, start adding in a full 8 oz bag of shredded cheddar cheese, and whisk until melted.


Then, start flavoring depending on how caliente you like your sauce.  I added in half a small can of chipolte peppers and about a third of a small can of green chilies, but just add a little and taste according to the crowd you are feeding. My kids don’t like super spicy, but you can really kick this up a notch! Reduce heat to low and stir every minute or so while you are working on assembling your taco boats. I totally cheated and grabbed some preseason Southwest Chicken Strips from the deli (I want to watch the game too!), and filled the boats.


Then, I topped with sour cream, the cheese sauce, and garnished with lime – SO EASY, right?  But they are SO tasty!  The shells make the perfect vessel for the yummy Beer Cheese sauce, which is packs a citrus punch from the Bud Light Lime!


Also, you just did double snack duty – this makes enough sauce to garnish 6 taco boats AND fill two boats to serve with chips! Win win!
