Celebrate Cinco De Mayo with Fish Tacos with Mango Pineapple Salsa

It’s Cinco De Mayo!!! Are you planning to celebrate? Our favorite way to celebrate is with food of course! We prepared a Cinco De Mayo feast this past weekend (a couple of days early), because we wanted to share it with you and give you some awesome and QUICK recipes for amazing fish tacos! We had some awesome products sent to us from IMUSA to help us along the way!

I won’t call this a 30 minute meal, as it will take you around an hour from start to finish, but it’s super easy! You start by marinating your fish. In a bowl, combine the following: 4 tablespoons olive oil, 1/2 cup chopped fresh cilantro, 4 tablespoons freshly squeezed lime juice, 2 tablespoons lemon juice, 1 teaspoon cumin, 1 teaspoon chili powder, 1/2 teaspoon oregano, and 1/2 jalapeno (seeded and chopped). Pour over 1 pound of any white fish (I used haddock, but you could use cod as well.) The IMUSA Citrus Squeezer makes the citrus juicing super easy, AND it catches all of the seeds while letting the juice flow through.


Leave your fish to marinate while you make Mango Pineapple Salsa!  Guys, this is SO easy and is so fast.  In your food processor combine the following: chopped white parts of a bunch of green onions (6-10), the other half of the jalapeno from your fish marinate, 1/2 cup of fresh cilantro, the juice of one lime, and the juice of half a lemon. Pulse until well chopped.  Empty into a bowl.  Then, in your food processor, combine chunks of freshly peeled mango and chunks of canned pineapple.  Pulse until chopped – some chunks will be bigger than others – don’t worry about it!  Mix this all together and put into an IMUSA Salsa Dish to chill in the fridge.

Before you start your fish, get all your taco fixins’ ready.  We used sour cream, fresh limes, cheese sauce, and chopped cilantro.  We also had sliced avocado, which was a breeze with the IMUSA Avocado Slicer.  The IMUSA Avocado Slicer was as easy to use as an ice cream scooper – and works pretty much the way. The results are so cool though and they display beautifully. I have never been much good at cutting pretty slices of avocado, but slicing them with the Avocado Slicer made me look like a pro.


Because the fish doesn’t take long to cook at all, warm your tortillas. The IMUSA Tortilla Warmer will keep them warm for you.  Just unstack your tortillas, then restack them and slide them into the pouch, pop the pouch into the microwave for just a few seconds, and you have evenly warmed and moist tortillas – so delicious!

Okay – it’s probably been about half an hour, but if it hasn’t been yet, wait about 30 minutes before cooking your fish.  Heat up a nonstick pan and spray with nonstick spray.  Heat it up over medium heat and put your fish in to cook, pouring the marinade over the top.  Don’t turn it for about five minutes, but pick up your pan every once in a bit and give it a shake to let the marinade flow over the fish.


After five minutes, turn and cook for around 2 more minutes or until cooked through.  Flake your fish and put it into a bowl.  You know have the perfect taco bar fixings!


Everyone can dig in now and make their tacos however they like!  Cinco de Mayo is a feel-good celebration, and presentation is so much of a feel good holiday’s appeal.     I’ve heard so many things about Fish Taco’s but I have yet to try them. They look really good!
