Easy No Bake CheesecakeHowdy. It’s me, Jen. Wife and mom of three, baker, blogger, public speaker, self-help nut, and superhero. I’ve been posting recipes for cookies, desserts, and snacks for three years now. You’d think I’d have the process down pat by now. But no.

Ever have one of those days? You know what I mean. One of those days when you’re behind on the laundry, and late to dance class, and your son can’t find his school shoes, and there’s nothing in the fridge for dinner, and the bathroom is covered in dried toothpaste, and the sink is overflowing with dishes, and the dog won’t stop barking.

And you have a headache.

Yeah, me too. In fact, I had one of those days not long ago. The awesome people here at Parent Palace were kind enough to let me guest post, and I was busy in the kitchen working on a fun cake recipe for you. The house was chaos, but I was determined to make this adorable cake.

Easy No Bake Cheesecake

How did it turn out, you ask? Really tasty, actually.

And really, really ugly.

Your 2-year old might turn it down, that’s how ugly it was.

So I did what I always do. I pouted for a while, cried, stomped my feet, pulled my hair, ate some ice cream, licked my wounds, and went back to the drawing board.

My second attempt was a delicious Rocky Road Cookie. Which is still stuck to my baking sheet.

Easy No Bake Cheesecake

By the time I got to attempt number three, I wanted to be certain I had something reliable. Reliable and easy. Because, let’s face it, most parents don’t generally have hours and hours of free time available every
day to dream up fancy dessert recipes to feed their families. We need fast, easy, reliable, and cheap.

And voila! We have Easy Cheesecake.

Because it’s easy. Not because it’s made from Easy Cheese.

Actually, this recipe calls for… {drumroll please}…

  • Just 4 Ingredients! (And one of them is the graham cracker crust!)
  • NO Baking!
  • Only a few minutes of chilling time!

This is literally easy enough, your kids could make it all by themselves. All you have to do is eat it!


  • 8 oz. cream cheese, softened
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 graham cracker crust
  • pie filling of your choice (optional)


  • Use beaters to combine cream cheese, milk, and lemon juice, until
    mixture is smooth.
  • Pour into a prepared graham cracker pie crust.
  • Chill 30-60 minutes. Serve cold, and top with pie filling if

    “No bake” sure speaks to me in the summer! We love cheesecake, but no way would I bake one now. This looks so good, and so easy, I’d love to try it!
