Sometimes life can be a little hectic, and you don’t have enough time to whip up a full blown entree and side dish from scratch. It’s a pain to get home, realize you don’t have the right ingredients to make something quickly, then have to run back out to grab ingredients and take-out can be so unhealthy and gets old quickly. We had a bunch of errands to run today and we still had more to accomplish after we got home and none of us really felt like making an elaborate meal. If only there were an easy and tasty meal to make when you’re pressed for time after work, school, practices and such… No need to give up all hope yet and pick up that takeout menu.Ling Ling Fried Rice is easy to make and really cuts down on dinner prep.
Ling Ling Fried Rice is such a great addition to our monthly meal planning line up. It’s so easy, and with five new varieties (Yakitori Chicken, Yakiniku Beef, Thai-Style Chicken, Chinese-Style Vegetable, and Bibimbap Beef), you’ll never get bored! The flavors are based on authentic Japanese, Chinese, Korean, and Thai flavors and we have LOVED every single variety that we have tried.
Ling Ling Fried Rice is great as a meal on its own, but we love cooking up a side dish to go with it. This time, we made yummy broccoli skewers with a simple soy sauced based dipping sauce. This is quick and easy, and has SO much kid appeal with its flavorful punch – and of course EVERYTHING is more fun with a skewer!
Breanna had a lot of fun mixing up the breadcrumbs and what kid doesn’t love making skewers. Prepping the skewers took about 10 minutes in total and it was super easy. The meal was super easy and I love it when I’m able to get the kids in the kitchen and getting involved with making dinner.
In order to make the cleanup a little easier, we lined our baking sheet with a bit of aluminum foil. We were able to just pull the foil off of the baking sheet when it was time to do the dishes. While the broccoli was in the oven, we worked on making the tasty sauce to go on the side. The sauce just takes a few minutes on the stove, and it makes a great accompaniment to the broccoli and the rice.
Here’s the full recipe so you can give it a try yourself.
- 1 crown of broccoli, cut into florets
- 1/2 cup breadcrumbs
- 4 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 pinch crushed red pepper flakes
- 1/4 cup soy sauce
- 1/2 cup soy sauce
- 1/2 cup sherry
- 2 tablespoons brown sugar
- 2 teaspoons of corn starch, dissolved in water
- Soak 4 bamboo skewers in water.
- Preheat oven to 425, and prepare a baking sheet with foil.
- Toast breadcrumbs in oven, about 1 minute until golden brown.
- In a bowl, combine remaining ingredients with toasted breadcrumbs. Add broccoli and toss to combine.
- Roast in oven, 8-10 minutes until tender.
- In a saucepan, combine all ingredients except cornstarch and bring to a boil over medium high heat.
- Reduce heat, and stir in cornstarch. Continue cooking about 1-2 minutes until thickened.
- Serve with Ling Ling Yakitori Chicken Fried Rice.
The reason that Ling Ling Frozen Fried Rice tastes SO good is their infusion cooking method – each grain of rice is infused with Ling Ling signature sauces for amazing flavor! I know I can’t tell the difference between Ling Ling and our local takeout- except I think Ling Ling is actually more flavorful!
Paired with our broccoli skewers, this made the perfect weeknight meal!
This dish was a big hit with the kids, not only because of the fun of eating off of skewers but because the rice was so tasty. The rice was super fluffy and the chicken was tender and seasoned well. I love that the dish has so many different veggies and I don’t have to try and trick the kids into eating their vegetables! The broccoli was super tender and the bread crumbs gave them a really satisfying crunch. The sauce gave the broccoli just the right amount of flavor and my youngest daughter actually mixed a little bit of her sauce in with her rice and chicken, which she thought was really delicious. For the entirety of the meal, the dogs were standing under the table, hoping for a tiny morsel to drop to the floor, but there was none left in any of the bowls to give them a tiny taste. It was too tasty to leave any in the bowls!
