Quick and Easy Bimibap Dinner with Ling Ling

There is no doubt that answering “What’s for dinner?” can be a stressful part of any parent’s day.  When I get home, sometimes all I want to do is collapse on the couch, and cooking dinner for an hour and a half is the LAST thing on my mind.  That’s why I’m so excited to be trying all the new flavors in the Ling Ling Frozen Fried Rice collection!

Bimibap is such an amazing dish – and there are a lot of different ways to do it, but at it’s most basic, it’s rice with veggies and sliced meat – usually beef.  Because it’s one of my favorites, I knew I would be pretty picky with Ling Ling’s Bimibap Beef Frozen Fried Rice. It TOTALLY exceeded my expectations! I think the reason that Ling Ling is able to make an Asian Style Fried Rice that is as good as take out is because of their infusion cooking method – each grain of rice is infused with Ling Ling signature sauce for incredible flavor in every single bite!

Plus, it’s TOTALLY easy to cook in the microwave.  I paired our Bimibap Beef with an awesome recipe of roasted Brussels sprouts with a homemade plum sauce.  This recipe is SO easy, and has about 10 minutes of active work and dinner is on the table in under 45 minutes.  You start by roasting your Brussels sprouts.

While your Brussels sprouts are cooking, you have time to pop your Ling Ling Fried Rice into the microwave and cook up your plum sauce.  Ling Ling Bimibap Rice is SO packed with yummy veggies and strips of beef – and every bite is packed with flavor – you don’t even need to add on – it’s an awesome meal all by itself!

After you flip your Brussels sprouts, you can cook up your This sauce is SO good – it is rich and flavorful and pairs perfectly with the sprouts and Ling Ling Bimibap Beef Rice! It’s not the prettiest sauce, but it packs a flavor PUNCH!  And because Bimibap is a veggie bowl, I plated right on top of our Ling Ling Frozen Fried Rice – SO tasty!

Brussels Sprouts with Plum Sauce

Ingredients

    For sprouts:
  • 1 pound Brussels sprouts, halved with ends removed
  • Olive oil
  • Salt
  • Pepper
  • For Plum Sauce
  • 1 tablespoon olive oil (I like to use garlic flavored)
  • 3 cloves minced garlic
  • 1/4 cup chopped prunes
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon curry powder
  • 2 teaspoons soy sauce
  • 2 tablespoons sugar

Instructions

  1. Preheat oven to 400 degrees.
  2. Prepare a baking sheet with foil (saves cleanup!)
  3. Toss Brussels sprouts with olive oil, and season with salt and pepper.
  4. Bake for 30 minutes until crispy and cooked through, turning halfway through cooking time.
  5. To prepare the sauce, heat the olive oil over medium heat in a saucepan, and saute garlic until fragrant.
  6. Add the prunes and reduce heat.
  7. Add curry, balsamic vinegar, soy sauce, and sugar and stir to combine.
  8. Bring to a boil, and cook a few minutes until the sauce thickens.
