It’s time for back to school! That means for me as a single mom, life gets even crazier. Because my daughters go to different schools, back to school means full time taxi driver gets added to my to-do list. Sometimes when I get home, I want to crash. The last thing I want to do is spend an hour cooking dinner. Quick, easy, and delicious meals that don’t wreck the kitchen are pretty much EVERYTHING. That’s why I was SO excited to put together an awesome recipe featuring Hillshire Farm® lunch meat in a tasty, quick casserole that would feed my girls dinner and have leftovers for lunch the next day! We use Hillshire Farm® lunch meat ALL the time in our lunch boxes and for quick, tasty sandwiches on busy nights, but there are SO many options that I wanted to up our game – so I stocked up at Walmart in the lunch meat aisle!
Walmart has SO many varieties of Hillshire Farm® lunch meat that it was hard to decide which ones I was going to choose, but I ended up with a flavorful Hillshire Farm® Black Pepper Turkey Breast and Hillshire Farm Naturals® Black Forest Ham for my simple, easy 5 INGREDIENT CASSEROLE!
This is so simple – you just need two packages of your favorite lunchmeat, two packages of crescent rolls, 6 eggs (beaten with a little salt and pepper), one 12 oz jar of roasted red peppers (drained) and two packages of Italian cheese. You start by layering one canister of crescent rolls on the bottom of a 9 x 13 pan.
Just press down to get rid of the perforations. Then, make one layer of meat (I put ham on the bottom of mine), half the red peppers, and about ⅔ of the bag of cheese. Then, drizzle about ⅓ of the beaten eggs over the top.
Then, you repeat the layers – meat, peppers, and cheese (I used the rest of the bag of cheese and then about ¼ of another bag). Drizzle another ⅓ of the beaten eggs over the top – don’t worry- you won’t get full coverage and that’s ok! Finally, use your second can of crescent rolls to form the top crust (pinch and push the perforations out again) and drizzle with the rest of your egg mixture.
Then bake in a 350 degree F oven, covered with foil for 25 minutes and then uncovered for about 20 more minutes, or until the top is golden brown.
Guys, I have to tell you, this casserole is SO easy. It takes about 5 minutes to assemble, and the kids can TOTALLY help. My 11 year old could definitely assemble this independently. Cleanup took less than 5 minutes which is seriously THE BEST.
And here’s the best part. It’s SO DELICIOUS. Hillshire Farm® lunch meat helped me save time, energy and stress and the kids LOVED the casserole. It’s cheesy and comforting and the Hillshire Farm® lunch meat gives it such great flavor! The addition of the egg would also make this a killer breakfast casserole!
