As a single mom raising two girls, it’s probably a pretty obvious statement that I’m a busy lady.  However, despite how busy we are, I think it’s so important to help educate my daughters about making healthy food choices and establishing good habits.  We try to find a way to stay physically active in some way every day, even if it’s just taking the dogs on a walk around the block.  Another thing that is definitely in the back of my mind from when I was a kid is my grandfather, who raised me.  He was insulin-resistant and it was always important that he watched what he ate – because of that I think I have always had an awareness of the importance of eating well, especially as it relates to blood sugar. At the same time, I want my kids (and me!) to have a varied and exciting diet that they love – in my opinion healthy eating should be fun and delicious!

In the summertime, if your family is anything like mine, the grill is king. It can be easy to revert to throwing hamburgers or hotdogs on the grill, but don’t be intimidated by the challenge of cooking healthy on the grill! It’s so much fun to cook with fresh seafood – and SO tasty! A few notes on the recipe (which you can get below) from my prep…the tinfoil here is a MUST.  It keeps all the juices from running down into the grill.

This is such an easy and fast recipe! You just have to be patient while your clams open up and your asparagus gets a nice char to it!

This meal is really a show stopper and is so healthy – and low calorie!  The garlic-lime-chili pepper combo is the perfect marriage that compliments but doesn’t overwhelm the fresh clams – this is a KEEPER recipe!

Grilled Clams with Garlic (Butter) and Lime Grilled Clams with Garlic (Butter) and Lime

Ingredients

  • 2 2/3 tablespoons I Can't Believe It's Not Butter
  • 3 cloves garlic, peeled, thinly sliced
  • 1/2 teaspoon crushed red chili flakes
  • 2 tablespoons parsley, minced
  • 24 littleneck clams, well washed
  • Juice of 1 lime

Instructions

  1. Melt butter and add the garlic, red chili flakes, and parsley. Place in a small cup and set aside.
  2. Preheat grill to high. Place well-washed clams on a piece of foil or cookie baking pan to catch the juices.
  3. Cook for 8-10 minutes, turning halfway through, until cooked through and clam shells fully open. Drizzle the butter into the clam shells and serve. Discard any clams that do not open.

    I never realized you can make clams on the grill. I live in a complex where this isn’t allowed, but I would love to try it someday at a pal’s place! It sounds delish and so healthy!

    This sounds like a really great recipe. I love seafood but I rarely cook it myself. I always thought it would be hard, but this recipe sounds simple enough.

    I have to share this with my mom! I bought her clams a while back because she loves them, and she was looking for something different to do with them. She ended up just doing butter and garlic, but this sounds even better!

    Wow, I have never been brave enough to cook clams myself. I have only ever eaten them at a restaurant because I assume they can do it better than me. Looks yummy!

    My mouth literally watered when I read the title in here. I have never tried grilled clams but I love clams and I love to grill stuff so I’m pretty sure this is a match made in heaven.
