I mentioned in an earlier post that I had five new goals this year – one of them being exercising more..balance is something that is important to all our lives. With exercise, I’m trying to not undo all of that tiring, hard earned sweat equity in a junk food-fueled frenzy. So eating healthier is something I’m working on – it’s especially hard because we are so busy. Often times my wife will get home from work and it’s all we can do to get the kids fed, homework done, chores done, etc. Sometimes we don’t even sit down to eat ourselves until after the kids are in bed, and by that time, cooking up a five-course meal is the last thing on our minds…fast food sounds pretty awesome at that point! So some strategies for these late night meals was definitely in order. This is why I was super excited to give STOUFFER’S® FIT KITCHEN™ a try – they were super easy to find at Walmart, and they had a great selection!
In addition to the awesome flavors like Bourbon Steak and Oven Roasted Chicken, I love that the STOUFFER’S® FIT KITCHEN™ meals have a great balance of protein, veggies, and good carbs. For us, getting this balance is hard a times, but I am definitely committed to restoring some balance in my life in both my diet and my exercise habits.
I couldn’t wait to try my first STOUFFER’S® FIT KITCHEN™! I tried the Monterey chicken, which comes with white meat chicken with diced red skin & sweet potatoes with a BBQ sauce and green beans!
Looks pretty yummy, huh? It definitely was – the green beans were crisp, the chicken was tender and juicy, and the BBQ sauce had just the right amount of sweetness. I can definitely say that STOUFFER’S® Fit Kitchen meals are delicious and satisfying. If you are looking for balance in your meals in 2016, you have to give them a try! I wanted to make an awesome side dish that was healthy and tasty (balance, right?) so I whipped up an flavorful Spicy Mango Spinach salad. This is more of a warm salad than a cold salad, and it’s SO easy to make. You can grab the full recipe below, but you basically start by sauteeing garlic, ginger, mango, and cilantro in a pan with olive oil…and then spice it up with some red pepper!
Then you add a spinach and kale mix until partially wilted – I add mine in halves so there is still some crunch to the spinach!
Then you just mix it up and you have a quick, easy but flavor-filled accompaniment to STOUFFER’S® FIT KITCHEN™ Monterey Chicken! You can check out more ideas on this Flavorful Moments Pinterest Board!

- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Extra virgin olive oil
- 2 cups diced mango
- Red pepper to taste
- 1/4 cup cilantro
- 4 cups Spinach/Kale Mix
- Fresh lime juice
- Saute garlic and ginger in a pan with 2 tablespoons extra virgin olive oil over medium heat until garlic is fragrant.
- Add mango and cilantro, stirring until well warmed.
- Add red pepper to taste.
- Add half of the spinach/kale mix until slightly wilted, then remove from heat. Stir in the remaining spinach mix.
- Garnish with fresh lime juice.
