With school in full swing now, and with my eldest playing volleyball, our schedules are, in a word, BANANAS. We are constantly on the go! With having a long drive to school in the morning, my eldest and I get up at 5 am, and often don’t get home until 6:30-7:00 after practice. By that time, everyone is starving – especially on game days! So we have found that it’s absolutely imperative to have a pre-dinner snack ready to go. I was inspired by Farm Rich’s Back Your Snack contest to create my own quick, easy snack that would be PERFECT for after volleyball games but that wouldn’t be too filling and ruin suppers. And of course, it needed to incorporate some aspects of volleyball! I started by picking up some of my favorite Farm Fresh products at Walmart for inspiration, along with some Walmart fresh bell peppers, and a great package of pre-sliced peppers and onions (hello, time saver!).
If there is anything that I have learned as a mom, is that kids will eat practically ANYTHING if it comes on a stick. Seriously. Anything. Put lima beans and Brussels sprouts on a stick and there’s at least a 50% chance they will go down the hatch. So I knew a skewer would be a huge hit with my daughter. And what better a tool to create a volleyball-themed snack than Farm Rich Original Meatballs! I started by popping the meatballs into the oven, while I made a yummy dip. This is so easy, but tasty, and I made with ingredients I already had at home!
Start by emptying a small container of sour cream into a bowl. Mix in a pre-made ranch dip mix – easy right? But kick it up a notch! I add 4-5 drops of Tabasco sauce that gives it some punch kick, a little garlic powder, and some cracked pepper! This really amps up the flavor but adds about 30 seconds to prep – by the time you are done with your dip, your meatballs will be ready to go!
Start your skewers with a meatball. I then layered on green pepper, because I wanted to surprise my daughter with her school team colors – green and white – after a winning game day! Serve your skewers with your dip, or you can put a little dab of dip on each meatball to give the look of a volleyball, if you’ve got a volleyball kiddo (even if you don’t these are REALLY good snacks!!!)

My daughter LOVED her Farm Rich meatball skewers (especially because they were in her school colors), and I loved them because they were fast, easy and tasty to prepare, and let me focus on getting dinner started without constant questions about when everyone would be fed!!! With a quick snack all ready to go, my daughter was more than happy to sit and work on her homework while I worked in the kitchen! Farm Rich snacks save the day!
