Well, we are fully in New Year’s Resolution season, and if you are like me, there has been more than one year in the past where I have bitten off more than I can chew. Only to fail in February. These days, I tend to make smaller goals that I can actually attain. Otherwise, I end up feeling bad about myself and fall back into old bad habits.
One of my goals this year (actually, I cheated and started late last year) is to eat more healthy breakfasts at home. It’s far too easy to revert to eating junk at the drive through, which is bad for my waistline AND my budget. One healthy habit that is easy and YUMMY to pick up is eating more blueberries! Blueberries are incredibly delicious and so good for you! One cup of blueberries has only 80 calories, and contain 3.6 grams of fiber as well as vitamins C and K and manganese! These little guys pack both a taste AND a nutritional punch!

One of my favorite way to eat blueberries doesn’t take a whole lot of effort….
That’s one of the best things about blueberries! They make a great snack just by themselves – if you want to see kids go crazy in my house, put out a bowl of blueberries! They will be gone much faster than chips or other unhealthy snacks!
As I mentioned earlier, one of my little changes that I’m trying to make is to eat healthier breakfasts at home – and blueberries make that an EASY and yummy little change to make! One of my favorite ways is to mix fresh blueberries into yogurt. This is so pretty and delicious both – and quick – which is super important in my busy morning schedule!
You might think that blueberries are a summertime fruit, and while I love seeing blueberries as a part of July 4th desserts, blueberries are in season year round! You can probably find local or domestic blueberries from April to September, but you can find yummy blueberries imported from Chile, Peru, and Argentina throughout the winter. You can also freeze local blueberries over the summer – these are good to chomp on frozen as well as for use thawed!

One of my other favorite ways to eat blueberries is in dessert, and you can incorporate blueberries into quick, healthier desserts. Check out this yummy “Mug Cake” featuring blueberries!
This is SO easy to make! Simply combine 4 tablespoons of whole wheat flower, 3 tablespoons of white sugar, 2 tablespoons of brown sugar, and 1 teaspoon of baking powder into a large coffee mug. Add milk 1 tablespoon at a time until the mixture resembles cake batter. Add a few tablespoons of blueberries and mix in. Pop into the microwave for about 2 minutes, and voila! You have a quick little dessert that for me is somewhere between a cake and a cobbler. A little dollop of whipped cream and some extra blueberries = quick dessert heaven!
