The Nutrition Twins Veggie Cure Book is all about veggies for your health and well being Tammy Lakatos Shames & Lyssie Lakatos. We all know that veggies are good for us but do we know why or how to use them? This book helps us understand why vegetables are so important and uses these nutrition packed foods in delicious recipes that will make you want to eat your veggies!
Pictured here is the Chipotle Smashed Sweet Potatoes, these are my favorite so far. Not only do they help me enjoy my vegetables but it is so easy to make.
All you need is:
4 medium sweet potatoes
1/2 dried Chipotle pepper
2 tablespoons I can’t believe it’s not butter light
a little salt to taste
Preheat your oven to 400 degrees F Roast the sweet potatoes in the oven for 45 to 60 minutes or until very soft. Meanwhile, in a coffee grinder or blender, blitz the chipotle pepper until it is finely ground. Carefully remove the skins from the hot potatoes. Place the sweet potatoes in a heatproof bowl and smash them with a fork. Add the I can’t believe it’s not butter and chipotle powder. Mash or blend until smooth and creamy. Salt to taste and serve. If you can’t find dried chipotle pepper use a substitute of 1 teaspoon chipotle hot sauce like Tobasco or Cholula brand for the dried pepper.
There are so many great recipes in this book, along with helpful information I didn’t know about what I was and wasn’t eating. Now I will be able to make better choices for my family and myself. I like how they use food as a prescription, because there are so many health benefits from foods we just need to know which ones to use for what.
This book takes the guess work out and really can help you fight off disease and meet your health goals easily.
