June is National Corn and Cucumber Month, so we’ll be including some recipes in celebration of that all month long. Since summer is here  and people are contemplating bathing suit weather, we’ve also made Wednesday a day full of lighter fare options. With the exception of dessert, because you need a treat every now and again.

This week’s meal plan can easily be rearranged to suit your tastes and needs. Many of these also easily accommodate substitutions.  I love to hear about the different things people like to eat, so I’d love to hear how you change these up to suit your family’s taste buds.
