It’s only just recently occurred to me that Valentine’s Day is way too close to New Years. Everyone who has made a resolution to lose weight is faced with candy and sweets during every shopping trip. Candy is one of the most popular Valentine’s Day Gifts; this is insane! Today I made an amazing treat that would make the perfect Valentine’s Day Gift – Cheesecake Stuffed Strawberries.

The beauty of these are they’re almost completely guilt free. They do have 3 tablespoons of confectioners sugar, and I did dip a few in chocolate – but they’re a great cheat day item!
Here’s how to make these Cheesecake Stuffed Strawberries:
Ingredients:
- 1 pint (or more) of Strawberries (about 24 strawberries)
- 8 oz. package of 1/3 Less Cream Cheese
- 3 tbsp. of Confectioners Sugar
- 1/2 tsp. of Vanilla
- Chocolate Chips (optional)
- Graham Crackers (optional)
Directions:
Start by washing & cutting off the ends of the strawberries. With a paring knife, hollow them out as much as possible, leaving the berry intact.
In a microwave safe bowl, microwave the cream cheese for about 20 second to soften it. Mix with 3 tablespoons of confectioners sugar. Add in the vanilla.

Transfer the cream cheese mixture to a piping bag. Fill each strawberry with the mixture.
If you want to dip them (or some of them) in chocolate, melt a handful or so of chocolate chips in the microwave. Dip the strawberries in the melted chocolate and place on a wax paper lined cookie sheet. Place the Cheesecake Stuffed Strawberries in the freezer for about 20 minutes to harden the chocolate.

You can finely crush graham crackers and use them as a topping for the Cheesecake Stuffed Strawberries.
