On top of spaghetti all covered with sauce….
Spaghetti is one of the few meals that I can be assured that everyone will *like* and eat. Sometimes they might even eat second helpings especially when I add in some delicious meatballs.
Tonight I made spaghetti with Muffin Tin Meatballs. They were originally going to be “mini” meatballs but didn’t end up that way. And I throw a little twist into my meatballs that you will have to try.
Ingredients
- 1 1/2 lbs ground beef
- 2 eggs
- 1 bag of seasoned stuffing mix
- 2 teaspoons of salt
- 2 teaspoons of pepper
Directions
1. Preheat oven to 350
2. Mix ground beef, eggs, stuffing mix, salt & pepper
3. Knead the mixture together until all the stuffing mix is combined and saturated
4. Roll into small balls
5. Place in muffin tin
6. Cook for 15-20 mins or until golden brown on the outside
Add meatballs to some spaghetti and tomato sauce for a flavorful meal. OR you can even eat them by themselves or on a hoagie roll with sauce (add some Parmesan cheese for a meatball sandwich). The possibilities are endless. And they are extra tasty when you use the stuffing instead of plain oatmeal or bread crumbs.
